Loaded Baked Potato and Egg

 Everyday for dinner it's the same old tune, Me: "What do you want to eat?".......Husband: "It doesn't  matter." Really??? Insert sarcastic remark here. Soooo once again I must decide and if doesn't like it well...We just won't go there.

But this night I scored big. I love eggs, WE love eggs and I also love a good baked potato. Put them together with some extra ingedients and VIOLA! Eat your heart out Martha Stewart (even though she probably invented this anyways). This recipe goes by many names; potato boats, idaho sunrise, egg stuffed baked potato...You get the idea. Ill just called it:



Loaded Baked Potato and Egg

Ingredients:
2 or 3 LARGE russet potatos (or one per person)
eggs (one per potato)
cheese
bacon or ham
butter
salt and pepper
*You can also add anything else you want to this. Go on and get creative.

Pre-bake your potatoes. I just pop mine in the microwave (cause everyone is hungry NOW) and use that awesome baked potato button. So convenient.... Once they are done use a knife to carefully cut off the top part of the potato. Then with a spoon, hollow out the middle part of the potato.


Make sure you don't cut a slit through your potato like I did or you'll have a fun mess to clean up. 


You can take out as much of the potato as you like. Make sure you have enough room to shove all your ingredients inside.
Put some butter in the middle then season with salt and pepper. Add your bacon, ham, cheese, or whatever else you might want to put in, just make sure you have enough room for the egg. Then break the egg into your potato bowl. Top with more bacon, cheese, salt and pepper.

Bake at 350 degrees F for about 20-30 min. or until the egg whites are fully cooked. Since I'm pregnant I cooked them all the way and it still came out amazing. Serve hot, but don't burn your mouth!!

Excuse my fine china. I didn't feel like washing dishes (again).
 Now what to do with all that left over potato...

Add an egg or two ( I needed two) to the leftover potato plus bacon, ham, cheese, and salt/pepper...Give it a good mix.


Place in buttered or oiled mini muffin tins and sprinkle with more cheese for extra yumminess. Bake at 350 degrees F until it's nice and puffy.


Yay! Tomorrow's breakfast is ready to go!!
